- If you are prescribed 1200 Kcal,1400 Kcal, 1600 and 1800; you can consume: 3/4 katori
- If you are prescribed 2000 Kcal, you can consume: 1 katori
- 4 cups ladyfinger (bhindi)
- 1 large onion, finely chopped
- 4 garlic cloves, finely chopped
- 2 whole green chillies, finely chopped (optional)
- 4 tsp mustard oil
Dry Spices
- ½ tsp cumin seeds
- ½ tsp fenugreek seeds
- ¼ tsp turmeric powder
- ½ tsp coriander powder
- Use minimal amount of salt
- Wash the ladyfingers under running water and allow them to dry.
- Peel onion and garlic, wash along with green chillies. Slice the green chillies and cut the ladyfinger lengthwise.
- Roughly chop the onion and garlic and grind it into a paste.
- In a pan, heat ½ tsp of mustard oil. Sauté the lady fingers for 4-5 minutes. Remove them and keep them aside.
- Now, add the remaining mustard oil to the pan. Add the fenugreek seeds and let them splutter. Add the onion-garlic paste and cook the mixture thoroughly until it turns golden.
- Now, add the chopped green chilli, coriander powder, turmeric powder, and salt.
- Mix thoroughly and cook for two minutes.
- Now, add the sautéed lady fingers and mix well. Cook on low heat for 5-7 minutes.
- Serve hot with multigrain rotis.
